Cheesy Stuffed Meatloaf Bites are a savory, bite-sized twist on the classic meatloaf, featuring melty cheddar centers, seasoned ground beef, and a tangy glaze. These mini meatloaf muffins are perfect for family dinners, appetizers, or freezer meals. Easy to make, kid-friendly, and full of comforting flavor.
Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/4 cup finely chopped onion
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp Worcestershire sauce
1/2 tsp salt
1/4 tsp black pepper
4 oz cheddar cheese, cubed
1/4 cup ketchup or BBQ sauce
1 tbsp chopped parsley (optional)
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin.
2. In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic powder, onion powder, Worcestershire sauce, salt, and pepper until just combined.
3. Fill each muffin cup halfway with the meat mixture. Place a cube of cheddar cheese in the center.
4. Top with additional meat mixture to cover the cheese completely.
5. Brush each bite with ketchup or BBQ sauce.
6. Bake for 18–22 minutes or until internal temperature reaches 160°F.
7. Let cool for a few minutes before removing from the tin. Garnish with chopped parsley.
Notes
Avoid overmixing the meat mixture to keep the bites tender.
Use freshly grated cheese for smoother melting.
Let them rest after baking to help hold their shape.
