Ingredients
1 lb chicken breasts
12 oz rotini pasta
1 tablespoon olive oil
2 tablespoons butter
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
3 cloves garlic, minced
1 1/4 cups heavy cream
1 cup shredded mozzarella cheese
3/4 cup grated parmesan cheese
2 tablespoons chopped fresh parsley (optional garnish)
Instructions
1. Season chicken breasts with Italian seasoning, salt, black pepper, and red pepper flakes.
2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden and fully cooked (internal temp 165°F). Remove and let rest.
3. Boil rotini pasta in salted water until al dente. Reserve 1 cup of pasta water. Drain and set aside.
4. In the same skillet, reduce heat to medium-low. Melt butter and sauté minced garlic until fragrant.
5. Pour in heavy cream and whisk until warmed through.
6. Gradually add parmesan and mozzarella cheese, whisking constantly until the sauce is creamy and smooth.
7. Stir in the cooked rotini pasta. Use reserved pasta water to loosen sauce if needed.
8. Slice the cooked chicken and serve on top of the cheesy pasta.
9. Garnish with chopped parsley and extra parmesan if desired.
