Description

Ingredients

1 lb chicken breast or thighs

12 oz twisted pasta (rotini or fusilli)

8 oz Velveeta cheese, cubed

1 cup mozzarella cheese, shredded

3 cloves garlic, minced

2 tbsp butter

1 cup heavy cream or whole milk

1 tsp salt

1 tsp black pepper

1 tsp Italian seasoning

2 tbsp chopped parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook twisted pasta until al dente according to package instructions. Drain and set aside.

2. In a skillet, heat oil over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Sear until golden and cooked through, 5–7 minutes. Set aside.

3. In a saucepan, melt butter and sauté garlic until fragrant, about 1–2 minutes. Stir in cream, then add Velveeta and stir until smooth. Add mozzarella and whisk until melted.

4. Toss cooked pasta into the sauce, stirring to coat evenly. Add chicken on top or mix in. Garnish with parsley and serve hot.

Notes

Use block mozzarella for best melting results.

Adjust seasoning after combining for a balanced flavor.

Add steamed broccoli or spinach for extra veggies.
