Ingredients

2 cups cooked chicken, shredded or cubed

3 tablespoons butter

1 cup carrots, diced

1 cup celery, diced

1 cup yellow onion, chopped

2 cloves garlic, minced

1/4 cup all-purpose flour

6 cups chicken broth

1 cup heavy cream or milk

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley (optional)

1 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup milk

2 tablespoons butter, melted


Instructions

1. Melt butter in a large Dutch oven over medium heat. Sauté onion, carrots, and celery for 5-6 minutes until softened. Add garlic and cook 1 more minute.

2. Sprinkle flour over the vegetables and stir to coat. Gradually pour in chicken broth while stirring until the mixture thickens slightly. Season with salt and pepper.

3. Stir in the cooked chicken and bring the soup to a gentle simmer. Cover and reduce heat to low.

4. In a bowl, mix flour, baking powder, salt, and pepper for the dumplings. Stir in milk and melted butter until just combined.

5. Drop spoonfuls of dumpling dough onto the simmering soup. Cover and cook for 15 minutes without removing the lid.

6. Remove lid and stir in the cream. Simmer another 2–3 minutes until heated through. Garnish with parsley if desired and serve hot.

Notes

Don’t lift the lid while the dumplings are steaming; this traps heat for even cooking.

Use rotisserie chicken to save time and add extra flavor.

Add fresh thyme or rosemary to the dumpling dough for an herby twist.
