Description

Ingredients

1 tablespoon olive oil or butter

1/2 cup diced onion

1/2 cup diced carrots

1/2 cup diced celery

2 garlic cloves, minced

2 cups cooked shredded chicken (breast or rotisserie)

4 cups chicken broth

1 (16 oz) package potato gnocchi

1 cup heavy cream or half-and-half

2 cups fresh spinach

1 teaspoon Italian seasoning

Salt and pepper to taste

Optional: fresh basil or parsley for garnish


Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add onion, carrots, and celery. Sauté for 5 minutes until softened.
  2. Stir in the garlic and cook for 1 minute more.
  3. Add the shredded chicken and chicken broth. Bring to a gentle boil, then reduce to a simmer for 10-15 minutes.
  4. Add the gnocchi and cook for 3-5 minutes, until they float and are tender.
  5. Stir in the cream or half-and-half. Heat gently without boiling.
  6. Add spinach and Italian seasoning. Stir until spinach wilts. Season with salt and pepper.
  7. Serve hot with optional fresh herbs on top.
