Ingredients

4 boneless, skinless chicken breasts

1/2 cup unsalted butter, softened

3 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

2 large eggs, beaten

1/2 cup all-purpose flour

1 cup panko breadcrumbs

Salt and pepper to taste

Oil for frying (canola or vegetable)


Instructions

  1. Prepare the filling: Mix butter, garlic, parsley, and dill. Shape into a log and chill until firm.
  2. Flatten chicken: Pound each breast to 1/4-inch thickness.
  3. Fill and roll: Place butter in the center, fold sides in, and roll tightly.
  4. Coat: Dredge each roll in flour, egg, then panko. Repeat egg and panko for extra crispness.
  5. Fry: Heat oil in skillet and fry each side 4-5 minutes until golden.
  6. Bake: Transfer to 350°F oven and bake 15 minutes until cooked through.
