Ingredients
1 lb ground chicken
1/4 cup finely chopped onion
3 cloves garlic, minced
1/4 cup chopped fresh parsley
1/3 cup breadcrumbs
1 large egg
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
3/4 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1 cup plain Greek yogurt
2 cloves garlic, minced
1 tbsp lemon juice
1 tbsp chopped fresh dill or parsley
1/4 tsp salt
Instructions
1. In a large bowl, combine the ground chicken, chopped onion, garlic, parsley, breadcrumbs, egg, cumin, coriander, paprika, salt, and black pepper. Mix just until combined.
2. Shape the mixture into small oval kofta or compact patties of equal size.
3. Place the shaped kofta on a tray and chill for 10 to 15 minutes if you have time.
4. In a small bowl, stir together the Greek yogurt, garlic, lemon juice, dill or parsley, and salt until smooth. Refrigerate until ready to serve.
5. Heat the olive oil in a large skillet over medium heat.
6. Add the kofta in a single layer and cook for 4 to 5 minutes per side, turning carefully, until browned and fully cooked through.
7. Let the kofta rest for 2 minutes after cooking.
8. Serve warm with the garlic yogurt sauce, plus extra herbs or lemon if desired.
Notes
Use finely chopped onion so the kofta mixture holds together better and cooks evenly.
Do not overmix the chicken mixture or the kofta can turn dense instead of tender.
Chilling the shaped kofta before cooking helps them keep their shape in the skillet.
