Ingredients
2 cups cooked chicken, shredded or chopped
1 box stuffing mix (6 oz)
1 ½ cups chicken broth
1 can cream of chicken soup (10.5 oz)
½ cup onion, diced
½ cup celery, diced
½ cup carrots, diced
2 tablespoons butter
½ teaspoon salt
½ teaspoon pepper
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Combine stuffing mix and warm chicken broth in a large bowl. Let it sit to absorb moisture.
2. In a skillet, melt butter and sauté onion, celery, and carrots for 5–7 minutes until soft. Season with salt and pepper.
3. Spread cooked chicken evenly in a greased 9×13 baking dish. Top with the sautéed veggies and cream of chicken soup. Mix gently.
4. Spread the stuffing mix over the top evenly without pressing it down.
5. Cover with foil and bake at 350°F (175°C) for 20 minutes.
6. Remove foil and bake an additional 15 minutes until golden and bubbling.
7. Let rest 5–10 minutes before serving. Garnish with parsley if using.
Notes
Don’t press the stuffing layer down—it should bake fluffy, not dense.
To save time, use pre-chopped frozen vegetables.
You can mix in a tablespoon of sour cream with the soup for an extra creamy texture.
