Ingredients
2 chicken breasts or thighs, cut into bites
2 tablespoons butter
3 cloves garlic, minced
1 teaspoon chili flakes or 1 tablespoon chili paste
8 oz rotini pasta
1 cup corn kernels
1 cup heavy cream
2 teaspoons Cajun seasoning
1/2 cup grated Parmesan cheese
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley or scallions for garnish
Instructions
1. Season chicken with salt, pepper, and a pinch of Cajun seasoning.
2. Heat olive oil in a skillet over medium-high heat. Add chicken and sear until golden brown on all sides.
3. Lower the heat, add butter, minced garlic, and chili flakes or paste. Stir to coat chicken in the garlic butter mixture.
4. In a large pot, cook rotini pasta according to package directions. Drain and reserve 1/4 cup pasta water.
5. In the same pot, melt a small amount of butter. Stir in heavy cream and bring to a simmer.
6. Add Cajun seasoning, corn kernels, and Parmesan cheese. Stir until smooth and creamy.
7. Mix in the cooked rotini and reserved pasta water if needed to loosen sauce.
8. Plate the pasta on one side and add chicken bites on the other. Garnish with parsley or scallions. Serve hot.
Notes
Use fresh garlic and butter for best flavor in the chicken glaze.
Don’t overcook the pasta; al dente holds sauce better.
Add extra chili flakes if you love it spicy.
