Description

Ingredients

1 lb chicken breast, cut into bite-sized pieces

2 tablespoons cornstarch

2 tablespoons soy sauce (for marinating)

2 tablespoons soy sauce (for sauce)

1 ½ tablespoons hoisin sauce

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 cup broccoli florets

1 red bell pepper, sliced

2 green onions, chopped

½ cup roasted unsalted cashews

1 tablespoon sesame oil

2 tablespoons vegetable oil (for cooking)


Instructions

1. In a mixing bowl, combine chicken breast pieces with 2 tablespoons soy sauce and cornstarch. Let marinate for 10–15 minutes.

2. Prepare the sauce by whisking together soy sauce, hoisin sauce, rice vinegar, garlic, ginger, and 1–2 tablespoons of water.

3. Heat vegetable oil in a wok or large skillet over medium-high heat. Cook chicken in batches until golden and fully cooked. Remove and set aside.

4. In the same skillet, add more oil if needed and stir-fry broccoli and bell pepper for 3–4 minutes. Add green onions during the last minute.

5. Return chicken to the pan. Pour sauce over everything, tossing to coat. Add cashews and heat for another 1–2 minutes. Finish with a drizzle of sesame oil.

6. Serve hot over rice and garnish with extra cashews or green onions if desired.

Notes

Let the chicken marinate for at least 10 minutes for a juicier texture.

Use pre-roasted cashews to save time and boost flavor.
