Ingredients
2 chicken breasts
2 tablespoons chipotle in adobo sauce

1 tablespoon lime juice
½ teaspoon salt
¼ teaspoon black pepper
1 cup cooked black beans
1 cup corn kernels (fresh or frozen)
1 avocado, sliced
2 tablespoons chopped fresh cilantro
½ cup Greek yogurt or sour cream
1 tablespoon chipotle in adobo (for sauce)
1 tablespoon lime juice (for sauce)
Pinch garlic powder (for sauce)
Pinch salt (for sauce)
1–2 tablespoons water (to thin the sauce)
Instructions
1. In a bowl, combine olive oil, chipotle in adobo, garlic powder, onion powder, lime juice, salt, and pepper. Add chicken and coat evenly. Marinate for at least 30 minutes.
2. Heat a grill pan or skillet over medium-high heat. Grill chicken 5–6 minutes per side until cooked through. Let rest before slicing.
3. In a blender, combine Greek yogurt or sour cream, chipotle in adobo, lime juice, garlic powder, salt, and water. Blend until smooth and creamy.
4. In serving bowls, add black beans and corn as the base. Top with sliced chicken, avocado, and cilantro. Drizzle with creamy chipotle sauce.
