Description

Chocolate Chip Vanilla Custard Brioches are the ultimate homemade bakery-style treat. This sweet bread recipe blends soft brioche dough with creamy vanilla custard and melty chocolate chips. Perfect for breakfast, dessert, or a cozy indulgence, and ideal for freezing or make-ahead meals.


Ingredients

3 cups all-purpose flour

2 1/4 teaspoons active dry yeast

1/2 cup whole milk (warm)

1/4 cup granulated sugar

3 large eggs

1/2 cup unsalted butter (softened)

1/2 teaspoon salt

1 1/4 cups whole milk

1/4 cup granulated sugar

2 tablespoons cornstarch

2 large egg yolks

1 teaspoon vanilla extract

3/4 cup mini chocolate chips

1 egg (for egg wash)


Instructions

1. Make the Vanilla Custard: In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks over medium heat. Stir until thickened and smooth. Remove from heat and stir in vanilla extract. Cover and chill.

2. Prepare the Brioche Dough: Combine warm milk and yeast in a mixer bowl. Let it foam. Add flour, sugar, salt, and eggs. Knead with a dough hook, then add butter slowly. Knead until smooth and elastic. Let rise covered until doubled in size.

3. Shape the Brioches: Deflate dough and divide into 10-12 equal parts. Flatten each, place custard in the center, and fold dough around it to seal. Place seam-side down on parchment-lined tray. Top with chocolate chips.

4. Proof and Bake: Let shaped dough rise until puffy. Preheat oven to 350°F (175°C). Brush each with egg wash. Bake for 20–25 minutes or until golden brown.

5. Cool and Serve: Let cool slightly before serving. Dust with powdered sugar or drizzle with chocolate if desired.

Notes

Let the custard fully cool before filling to avoid melting the dough.

Use room temperature ingredients for smoother mixing and better dough texture.

For a flavor twist, add a touch of orange zest to the custard.
