Chorizo Gnocchi with Mozzarella

Description

A rich and hearty dish featuring soft gnocchi, smoky Spanish chorizo, and gooey mozzarella baked in a savory tomato sauce. Perfect for a satisfying family dinner or a cozy night in.


Ingredients

1 tbsp olive oil

1 small onion, diced

2 garlic cloves, minced

150g (5 oz) Spanish chorizo, sliced

500g (1 lb) gnocchi

400g (14 oz) canned chopped tomatoes

1 tbsp tomato paste

1 tsp smoked paprika

Salt and black pepper, to taste

Handful of fresh spinach (optional)

150g (5 oz) mozzarella, torn

Fresh basil, for garnish


Instructions

  1. Heat the olive oil in an oven-safe skillet over medium heat. Add the diced onion and cook until softened.
  2. Add minced garlic and cook until fragrant.
  3. Add sliced chorizo and cook until it begins to crisp.
  4. Stir in the gnocchi and toast for a few minutes.
  5. Add chopped tomatoes, tomato paste, smoked paprika, salt, and pepper. Stir to combine.
  6. Let the sauce simmer and thicken. Stir in spinach if using.
  7. Top with mozzarella and bake in a preheated oven at 200°C (400°F) for 10–15 minutes.
  8. Garnish with fresh basil and serve hot.
