Ingredients
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
150g (5 oz) Spanish chorizo, sliced
500g (1 lb) gnocchi
400g (14 oz) canned chopped tomatoes
1 tbsp tomato paste
1 tsp smoked paprika
Salt and black pepper, to taste
Handful of fresh spinach (optional)
150g (5 oz) mozzarella, torn
Fresh basil, for garnish
Instructions
- Heat the olive oil in an oven-safe skillet over medium heat. Add the diced onion and cook until softened.
- Add minced garlic and cook until fragrant.
- Add sliced chorizo and cook until it begins to crisp.
- Stir in the gnocchi and toast for a few minutes.
- Add chopped tomatoes, tomato paste, smoked paprika, salt, and pepper. Stir to combine.
- Let the sauce simmer and thicken. Stir in spinach if using.
- Top with mozzarella and bake in a preheated oven at 200°C (400°F) for 10–15 minutes.
- Garnish with fresh basil and serve hot.
