Description

These festive Christmas Macarons are crisp on the outside, chewy inside, and filled with holiday-flavored buttercream. Perfect for gifting, cookie swaps, or your dessert table, these gluten-free treats feature almond flour shells and delightful fillings like peppermint or white chocolate. A holiday cookie favorite with flair!


Ingredients

100g almond flour

100g powdered sugar

75g egg whites (room temperature)

70g granulated sugar

Gel food coloring (red, green, white)

1/2 tsp vanilla extract (optional)

115g unsalted butter (softened)

200g powdered sugar

12 tbsp heavy cream

1/2 tsp vanilla extract (or peppermint for holiday flavor)


Instructions

1. Sift the almond flour and powdered sugar into a bowl. Repeat sifting once to ensure smooth shells.

2. In a clean bowl, whip egg whites until foamy. Gradually add granulated sugar and beat until stiff, glossy peaks form.

3. Fold the dry ingredients gently into the meringue. Batter should flow like lava and form ribbons.

4. Transfer the batter to a piping bag fitted with a round tip. Pipe 1.5-inch circles onto a silicone mat or parchment paper.

5. Tap the tray firmly to remove air bubbles. Let rest for 30–60 minutes until a skin forms.

6. Preheat oven to 300°F (150°C). Bake macarons for 12–15 minutes. They should have risen feet and smooth tops.

7. Let shells cool completely before removing. Pair shells of similar size.

8. For filling, beat butter until creamy. Add powdered sugar, vanilla or peppermint, and cream until desired consistency.

9. Pipe filling on one shell and sandwich with another. Refrigerate for 24 hours to develop flavor and texture.

Notes

Ensure egg whites are room temperature for better volume.

Avoid over-mixing the batter; it should just flow off the spatula like thick ribbons.

Let macarons rest fully before baking—this helps prevent cracks.
