Description

These Churro Cheesecake Donut Cookies bring together the comforting cinnamon sugar coating of churros with the creamy indulgence of cheesecake. Soft, golden donut-shaped cookies are filled with a tangy cream cheese center and finished with a buttery cinnamon-sugar crust. Perfect for sharing or savoring solo.


Ingredients

8 oz cream cheese, softened

1/3 cup granulated sugar (for filling)

1 tsp vanilla extract (divided)

1 cup unsalted butter, softened

1/2 cup granulated sugar (for dough)

1/2 cup brown sugar

2 large eggs

2 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/4 cup butter, melted (for topping)

1/3 cup granulated sugar + 1 tbsp cinnamon (for coating)

Powdered sugar for dusting (optional)


Instructions

  1. Beat cream cheese, 1/3 cup sugar, and 1/2 tsp vanilla extract until smooth. Transfer to a piping bag and chill.

  2. In a large bowl, cream butter, 1/2 cup granulated sugar, and brown sugar until fluffy.

  3. Add eggs one at a time, then remaining vanilla extract. Mix well.

  4. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet mixture.

  5. Shape dough into donut rings. Pipe chilled cheesecake filling into the center groove. Cover lightly with extra dough to seal.

  6. Place on a lined baking sheet and bake at 350°F (175°C) for 12-14 minutes.

  7. Brush warm cookies with melted butter and roll in cinnamon sugar. Dust with powdered sugar if desired.
