Description

A cozy mashup of classic French toast and tender muffins, these Cinnamon Sugar French Toast Muffins are a warm, spiced treat perfect for breakfast or brunch. Moist on the inside and lightly crisp on the outside, they’re finished with a buttery cinnamon-sugar topping.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • 1/3 cup melted unsalted butter (plus extra for topping)
  • Cinnamon sugar mixture (for topping)
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
  2. In a bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk eggs, then add milk, vanilla, and melted butter.
  4. Add wet ingredients to dry ingredients and mix gently until combined.
  5. Spoon batter into muffin cups, filling each about 3/4 full.
  6. Bake 18–22 minutes or until golden and a toothpick comes out clean.
  7. While warm, brush muffin tops with melted butter and sprinkle with cinnamon sugar.
  8. Cool slightly in pan, then transfer to a wire rack. Dust with powdered sugar if desired.
