Ingredients
2 tablespoons olive oil
1 medium onion, chopped
1 red bell pepper, chopped
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon sweet paprika
1/4 teaspoon cayenne pepper (optional for heat)
1 can (28 oz) crushed tomatoes
Salt and pepper to taste
6 large eggs
Fresh parsley or cilantro, chopped (for garnish)
Crusty bread or pita (for serving)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté onion and bell pepper until soft, about 5-7 minutes.
- Add garlic and cook until fragrant, about 1 minute.
- Stir in cumin, paprika, and cayenne. Cook for 1-2 minutes.
- Pour in crushed tomatoes, season with salt and pepper.
- Simmer for 10-15 minutes until sauce thickens.
- Create wells in sauce and crack eggs into each.
- Cover and cook until eggs are set, 5-8 minutes.
- Garnish with herbs and serve with bread.
