Ingredients

Italian sausage

Russet potatoes

Yellow onion

Garlic

Chicken broth (low sodium)

Kale

Heavy cream

Olive oil

Salt and pepper


Instructions

  1. Brown the Italian sausage in a large pot or Dutch oven. Drain and set aside.
  2. In the same pot, add olive oil and sauté diced onion until soft. Add garlic and cook briefly.
  3. Pour in chicken broth and bring to a boil. Add sliced potatoes and simmer until tender.
  4. Return sausage to the pot. Add chopped kale and simmer until wilted.
  5. Stir in heavy cream. Warm through without boiling. Season with salt and pepper.
  6. Serve hot with crusty bread or rolls.
