These Coconut Almond Truffles are a quick dessert idea with a creamy coconut center, a whole almond tucked inside, and a soft snowy coating that makes them perfect for holiday trays, dessert boards, easy recipe collections, and sweet food ideas when you want a no bake treat that looks elegant but takes very little effort.
Ingredients
2 1/2 cups sweetened shredded coconut, plus more for coating
1 cup sweetened condensed milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
18 whole almonds
Pinch of salt
Instructions
1. In a medium mixing bowl, stir together the sweetened shredded coconut, sweetened condensed milk, vanilla extract, almond extract, and pinch of salt until fully combined.
2. Refrigerate the mixture for 20 to 30 minutes so it firms up and becomes easier to shape.
3. Place extra shredded coconut in a shallow bowl and set the whole almonds nearby for easy assembly.
4. Scoop about 1 tablespoon of the coconut mixture and flatten it slightly in your palm.
5. Place one whole almond in the center, then wrap the mixture around it and roll into a smooth ball.
6. Roll each truffle in the extra shredded coconut until fully coated.
7. Arrange the truffles on a parchment lined plate or tray.
8. Chill for at least 30 minutes, or until firm, then serve cold or slightly softened at room temperature.
Notes
Chill the mixture longer if it feels too sticky to roll easily.
Lightly damp hands can help shape the truffles without sticking.
Store the truffles chilled so they keep their neat shape and creamy texture.
