Ingredients

2 large boneless skinless chicken breasts

8 oz pasta (penne or rotini)

4 oz cream cheese

1 cup shredded cheddar cheese

1 packet ranch seasoning mix (about 1 oz)

1 teaspoon garlic powder

2 ½ cups chicken broth

½ cup milk or heavy cream

6 strips bacon

1 tablespoon olive oil

Salt and pepper to taste

1 tablespoon fresh chopped parsley (optional, for garnish)


Instructions

1. Cook chopped bacon in a large skillet over medium heat until crispy. Remove and place on a paper towel-lined plate, reserving 1 tablespoon of bacon grease in the pan.

2. Season cubed chicken with salt, pepper, and garlic powder. Sauté in the skillet until golden and cooked through. Remove and set aside.

3. Add cream cheese, ranch seasoning, and a splash of broth to the skillet. Stir until the cream cheese melts and becomes smooth.

4. Pour in remaining broth and uncooked pasta. Stir, bring to a boil, then reduce heat to simmer. Cook uncovered for 10–12 minutes, stirring occasionally until pasta is tender.

5. Return cooked chicken and bacon to the pan. Stir in shredded cheddar and milk. Mix until creamy and well-combined. Let simmer for 2–3 more minutes.

6. Garnish with parsley and extra bacon before serving.

Notes

Don’t overcook the pasta—start checking around the 10-minute mark for perfect texture.

Room temperature cream cheese melts easier into the sauce—soften it first for best results.

Want to lighten it up? Swap heavy cream for half-and-half and use reduced-fat cream cheese.
