Description

This comforting potato and sausage chowder recipe is the ultimate cozy meal, perfect for chilly nights. Made with hearty sausage, tender potatoes, and a creamy broth, this one-pot dinner is rich, flavorful, and easy to prepare. Ideal for meal prep or family dinners, this chowder is pure comfort food in a bowl.


Ingredients

1 lb ground sausage

4 medium Yukon Gold or Russet potatoes, peeled and diced

2 carrots, diced

2 celery stalks, diced

1 medium onion, chopped

3 garlic cloves, minced

4 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1 tsp dried basil

1 tsp dried parsley

1 tbsp olive oil or butter

Salt and pepper, to taste


Instructions

1. Heat olive oil or butter in a large soup pot over medium heat. Add chopped onion, garlic, carrots, and celery. Cook until softened and aromatic.

2. Add ground sausage and cook until browned, breaking it up with a spoon.

3. Stir in diced potatoes and pour in chicken broth. Bring to a boil, then reduce to a simmer. Cook until potatoes are fork-tender, about 15–20 minutes.

4. Reduce heat to low. Stir in heavy cream and cheddar cheese until fully melted and incorporated.

5. Season with dried basil, parsley, salt, and pepper. Let simmer for a few more minutes. Serve hot, garnished as desired.

Notes

Use Yukon Gold potatoes for a creamier texture that holds up well during simmering.

For a thicker chowder, mash some of the cooked potatoes directly in the pot.

If making ahead to freeze, add the dairy (cream and cheese) only after reheating.
