Description
A refreshing and vibrant salad that blends chewy pearl couscous with peppery arugula, briny olives, sweet cherry tomatoes, and creamy feta, all tied together with a zesty lemon vinaigrette. Ideal for potlucks, meal prep, or light lunches.
Ingredients
1 cup pearl couscous
2 cups arugula
1 cup cherry tomatoes, halved
1/2 cup mixed olives, pitted and sliced
1/3 cup crumbled feta cheese
Juice and zest of 1 lemon
3 tablespoons extra virgin olive oil
Salt and pepper to taste
Instructions
- Bring a pot of salted water to a boil and cook pearl couscous for 8–10 minutes until tender. Drain and let cool.
- In a small bowl, whisk together lemon juice, zest, olive oil, salt, and pepper.
- In a large bowl, combine couscous, arugula, tomatoes, and olives.
- Add feta and drizzle dressing over the top.
- Toss gently to mix and serve immediately or chill for later.
