Description

Cowboy Butter Chicken Bites are spicy, buttery chicken morsels seared to golden perfection and coated in a garlicky cowboy butter sauce. Ingredients

1.5 lbs chicken breast or thighs, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper

1/2 teaspoon salt

1/2 teaspoon black pepper

4 tablespoons butter

4 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon red pepper flakes

2 tablespoons chopped fresh parsley or chives (for garnish)


Instructions

1. Cut the chicken into bite-sized cubes and pat dry with paper towels.

2. In a mixing bowl, season chicken with salt, black pepper, smoked paprika, and cayenne pepper. Toss to coat evenly.

3. Heat olive oil in a large skillet over medium-high heat.

4. Add chicken to the skillet in a single layer. Cook for 5–7 minutes, flipping halfway, until golden and fully cooked. Remove and set aside.

5. Lower the heat. Add butter to the same skillet.

6. Once butter melts, stir in minced garlic, Dijon mustard, lemon juice, red pepper flakes, and an extra pinch of cayenne if desired.

7. Simmer sauce for 1–2 minutes until aromatic.

8. Return cooked chicken to the skillet. Toss well to coat with cowboy butter sauce.

9. Let it cook for an additional minute to absorb the flavors.

10. Garnish with chopped parsley or chives and serve warm.

Notes

Make sure chicken is dry before seasoning to help it sear instead of steam.

For deeper flavor, marinate the seasoned chicken for 15–30 minutes before cooking.

Don’t overheat the butter sauce—gentle simmering keeps the garlic from burning.
