Ingredients
1 lb sirloin or ribeye steak, cut into bite-sized pieces
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1 teaspoon red pepper flakes
1/2 teaspoon cayenne pepper
2 tablespoons chopped fresh parsley
Salt and black pepper, to taste
1 tablespoon olive oil (for searing)
Instructions
1. Pat the steak dry with paper towels and cut into bite-sized cubes. Season with salt and black pepper.
2. Heat a cast iron skillet over high heat. Add olive oil and sear steak bites in batches until browned on all sides. Do not overcrowd the pan. Remove and set aside.
3. Reduce heat to medium and add butter to the skillet. Stir in garlic, Dijon mustard, lemon juice, red pepper flakes, and cayenne pepper. Let simmer for 1–2 minutes until fragrant.
4. Return the steak bites to the skillet and toss to coat in the cowboy butter sauce. Let heat through for another minute.
5. Sprinkle chopped parsley over the top and serve hot with crusty bread, mashed potatoes, or over rice.
Notes
For the best sear, use a hot cast iron skillet and avoid overcrowding the pan.
Adjust spice level by reducing or omitting red pepper flakes and cayenne.
