Description

Cozy Tomato Tortellini Soup is the ultimate comfort meal, combining creamy tomato broth and cheesy tortellini in one pot. Ingredients

2 cups cheese tortellini

1 can (28 oz) crushed tomatoes

3 cups vegetable or chicken broth

1 cup heavy cream

3 cloves garlic, minced

1 small onion, diced

1 tablespoon olive oil or butter

1/4 cup fresh basil or 1 cup spinach (optional)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes


Instructions

1. Heat olive oil or butter in a large pot over medium heat. Add chopped onion and garlic, and cook for 5 minutes until softened and fragrant.

2. Pour in crushed tomatoes and broth. Stir well and simmer for 10 minutes to let the flavors blend.

3. Reduce the heat to low. Stir in heavy cream and season with salt, black pepper, and red pepper flakes.

4. Add cheese tortellini and cook according to package instructions, about 4–6 minutes, until tender.

5. Stir in basil or spinach if using. Serve hot with fresh herbs, black pepper, or parmesan.

Notes

Use fresh tortellini for quicker cooking or frozen if that’s what you have—just add a couple extra minutes.

Don’t overcook the tortellini, or they may fall apart in the broth.

For a protein boost, add cooked sausage or shredded rotisserie chicken before serving.
