Ingredients
2 chicken breasts, sliced into strips
2 cups penne pasta
4 oz cream cheese
1 cup shredded cheddar cheese
1 tablespoon ranch seasoning mix
1/2 cup heavy cream
1/2 cup chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon olive oil
1 tablespoon chopped fresh parsley (optional)
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season chicken with garlic and onion powder, salt, and pepper. Sear until golden and cooked through. Set aside.
- Cook penne pasta until al dente. Reserve 1 cup of pasta water and drain.
- In the same skillet, lower heat to medium. Add chicken broth, heavy cream, cream cheese, and ranch seasoning. Whisk until smooth.
- Stir in cheddar cheese until melted.
- Add chicken and drained pasta to the sauce. Toss gently to coat. Simmer for 2-3 minutes.
- Adjust thickness with reserved pasta water if needed.
- Garnish with parsley and serve warm.
