Ingredients for the Cranberry Brie Bites

  • Puff Pastry Sheets: The buttery, flaky base that crisps up beautifully in the oven.
  • Brie Cheese: Adds creamy richness; choose a mild brie for the best melt and flavor balance.
  • Cranberry Sauce (homemade or store-bought): Brings a tart-sweet pop that complements the rich brie.
  • Fresh Rosemary (optional): For garnish and a hint of earthiness.

These four ingredients combine to create maximum flavor with minimal effort.

How To Make the Cranberry Brie Bites

Step 1: Prep the Puff Pastry

Thaw the puff pastry sheets according to package instructions. Lightly flour your surface and roll them out slightly. Cut into 24 even squares.

Step 2: Shape the Bites

Lightly grease a mini muffin tin. Press each puff pastry square into a muffin cup, forming a small cup.

Step 3: Add the Brie

Cut the brie into small cubes (about 1-inch). Place one cube into the center of each puff pastry cup.

Step 4: Top with Cranberry Sauce

Spoon about 1 teaspoon of cranberry sauce over the brie in each cup.

Step 5: Bake to Golden Perfection

Bake at 375°F (190°C) for 15–20 minutes until the pastry is puffed and golden brown.

Step 6: Garnish and Serve

Cool slightly, then garnish each bite with a sprig of fresh rosemary. Serve warm for maximum ooze factor.

How to Serve and Store These Bites

Serve these warm from the oven, or at room temperature for gatherings. They’re fantastic as a holiday appetizer, on a charcuterie board, or for wine nights with friends.

If you’re prepping ahead, assemble the bites and refrigerate in the muffin tin (covered) for up to 24 hours before baking. Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated at 300°F for 5-7 minutes to re-crisp.

Frequently Asked Questions

Can I use a different cheese?

Yes! Camembert is a great alternative to brie with similar texture and flavor.

Can I make these ahead of time?

Absolutely. Assemble the bites and refrigerate. Bake fresh when you’re ready to serve.

Do I need to remove the brie rind?

Not necessary. The rind is edible and melts nicely with the cheese.

Can I use homemade cranberry sauce?

Yes, and it’s even better. Just make sure it’s not too watery so it doesn’t soak the pastry.

What else can I top them with?

Try crushed pecans, a drizzle of honey, or a dash of black pepper for added flavor and texture.

Can I freeze them?

It’s best to freeze them unbaked. Assemble, freeze in the muffin tin, then transfer to a bag. Bake from frozen, adding a few extra minutes.
