These Cranberry Brie Bites are a quick and elegant appetizer perfect for parties, holidays, and gatherings. Ingredients
1 sheet puff pastry thawed
6 oz brie cheese cut into small cubes
1/2 cup cranberry sauce
1 tbsp fresh rosemary finely chopped optional
1 tbsp honey optional drizzle
nonstick cooking spray
Instructions
1. Preheat oven to 375 F and lightly grease a mini muffin tin
2. Roll out puff pastry slightly and cut into 24 equal squares
3. Press each pastry square into the mini muffin cups to form small pastry shells
4. Place one cube of brie cheese into each pastry cup
5. Add about 1 teaspoon cranberry sauce on top of the brie
6. Bake for 15 to 20 minutes until pastry is golden and cheese is melted
7. Allow bites to cool for a few minutes before removing from pan
8. Garnish with rosemary and drizzle honey if desired then serve warm
Notes
Keep puff pastry cold before baking so the layers stay flaky
If cranberry sauce is thin use slightly less to avoid soggy pastry
Reheat leftovers in the oven at 300 F for about 5 minutes to restore crisp texture
