Description

Ingredients

1 cup all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1⁄4 teaspoon salt

1 cup milk

1⁄2 cup butter, melted

1 teaspoon vanilla extract

1 egg

1 can (21 ounces) cherry pie filling or 2 cups sweetened fresh fruit


Instructions

1. Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish with butter or non-stick spray.

2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.

3. In another bowl, mix milk, melted butter, vanilla extract, and egg until combined.

4. Pour wet mixture into dry and stir gently until just combined. Do not overmix.

5. Pour batter into prepared dish and spread it evenly with a spatula.

6. Spoon the fruit filling evenly on top of the batter. Do not stir.

7. Bake for 40–45 minutes or until the top is golden brown and a toothpick inserted into the crust (not the fruit) comes out clean.

8. Let it cool slightly before serving. Serve warm or at room temperature.

Notes

Don’t stir the fruit into the batter—the crust forms around it as it bakes.

Use a glass or ceramic baking dish for even heat distribution and a crisp edge.

For a twist, sprinkle cinnamon or turbinado sugar on top before baking.
