Description

Ingredients

4 oz cream cheese, softened

1/4 cup coconut oil, melted

1/2 tsp vanilla extract

2 tbsp powdered erythritol or monk fruit sweetener

1 tbsp unsweetened cocoa powder (optional for chocolate version)

1 tbsp shaved dark chocolate or crushed nuts (optional topping)


Instructions

1. Let the cream cheese soften at room temperature.

2. In a mixing bowl, combine softened cream cheese and melted coconut oil. Beat with a hand mixer until smooth.

3. Add vanilla extract and sweetener. Mix until well incorporated.

4. For chocolate flavor, mix in the cocoa powder.

5. Spoon the mixture evenly into silicone molds or mini muffin tins.

6. Tap gently to level the tops, then place the tray in the freezer for about 1 hour.

7. Once set, pop them out of the molds.

8. Sprinkle with shaved chocolate or crushed nuts if desired.

9. Store in an airtight container in the fridge for up to 7 days or freeze for up to 1 month.

Notes

Always use room temperature cream cheese to avoid lumps in the batter.

Adjust sweetness to your preference, especially if using flavored extracts or cocoa.

If using butter instead of coconut oil, texture will be firmer when chilled.
