Ingredients
1 lb beef sirloin or ribeye, cut into chunks
12 oz rotini pasta
1 cup heavy cream
4 oz cream cheese
1 cup sharp cheddar cheese, shredded
1 tablespoon Cajun seasoning
2 cloves garlic, minced
2 tablespoons butter
1 tablespoon olive oil
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
1. Season the beef chunks with Cajun seasoning, salt, and pepper.
2. In a skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sear the beef on all sides until golden and cooked through. Remove and set aside.
3. In a large pot, boil the rotini pasta in salted water until al dente. Drain and reserve 1/4 cup of pasta water.
4. In the same skillet, lower heat to medium. Add remaining butter and minced garlic; sauté until fragrant.
5. Stir in heavy cream and cream cheese. Whisk until smooth and creamy.
6. Gradually add cheddar cheese, stirring until melted and the sauce thickens.
7. Add beef back into the skillet and coat with the sauce. Add cooked rotini and stir until everything is fully coated.
8. Use pasta water to loosen the sauce if needed.
9. Garnish with parsley and serve hot.
Notes
For a spicier kick, add a pinch of cayenne or red pepper flakes when seasoning the beef.
If sauce is too thick, add pasta water a tablespoon at a time to loosen.
Use freshly shredded cheese for the creamiest melt—it makes a difference!
