Ingredients
1 lb chicken breasts
8 oz fettuccine pasta
1 1/2 cups mozzarella cheese, shredded
1 cup heavy cream
3 cloves garlic, minced
2 tbsp butter
1 tbsp olive oil
1 1/2 tbsp Cajun seasoning
Salt and pepper to taste
2 tbsp fresh parsley, chopped
Instructions
1. Pat chicken breasts dry and season both sides with Cajun seasoning, salt, and pepper. Let sit for a few minutes.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken 5-7 minutes per side until golden and cooked through. Set aside and slice.
3. Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Reserve 1/4 cup pasta water and drain.
4. In the same skillet, lower heat and add butter and minced garlic. Sauté until fragrant.
5. Stir in heavy cream. Gradually add shredded mozzarella, whisking until melted and smooth. Thin with pasta water if needed.
6. Toss cooked fettuccine into the sauce. Mix to coat.
7. Top with sliced Cajun chicken and sprinkle with chopped parsley. Serve hot with extra cheese if desired.
Notes
Always use freshly shredded mozzarella for a creamier sauce that melts smoothly.
Let the chicken rest after cooking to retain juices before slicing.
Add a splash of milk or cream when reheating to revive the sauce texture.
