Ingredients
2 boneless skinless chicken breasts
1 tablespoon Cajun seasoning
8 oz linguine pasta
3 cloves garlic, minced
1 cup heavy cream
1 ½ cups shredded mozzarella cheese
2 tablespoons butter
1 tablespoon olive oil
Salt and black pepper to taste
1 tablespoon chopped fresh parsley
½ teaspoon red pepper flakes (optional)
Instructions
1. Pat the chicken dry and season generously with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown and fully cooked, about 5-6 minutes per side. Remove and slice.
3. Boil linguine in salted water until al dente. Reserve ½ cup pasta water, then drain and set aside.
4. In the same skillet, melt butter. Add garlic and sauté until fragrant.
5. Stir in heavy cream and simmer for 2-3 minutes.
6. Gradually add mozzarella cheese while whisking until the sauce is smooth and creamy.
7. Toss cooked linguine into the sauce, adding a splash of reserved pasta water if needed.
8. Plate the pasta, top with sliced Cajun chicken, garnish with parsley and optional red pepper flakes. Serve hot.
