Ingredients
1 lb chicken breast
1 tablespoon Cajun seasoning
1 can (15 oz) chickpeas, drained and rinsed
8 oz linguine or spaghetti
1/2 cup feta cheese
1 head garlic
2 tablespoons olive oil
2 tablespoons water or cream (for blending)
2 tablespoons fresh parsley, chopped
Salt to taste
Instructions
1. Preheat oven to 400°F (200°C). Slice top off garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden.
2. Toss chickpeas with olive oil, Cajun seasoning, and salt. Roast or sauté until crispy and golden brown.
3. Cook pasta in salted boiling water until al dente. Reserve 1/4 cup pasta water, then drain.
4. Cut chicken into bite-sized pieces. Coat with Cajun seasoning. Sear in hot skillet with olive oil until browned and cooked through.
5. In a blender, combine roasted garlic cloves, feta cheese, olive oil, and water or cream. Blend until smooth and fluffy.
6. Toss cooked pasta with a bit of olive oil and reserved pasta water. Plate with chicken, whipped feta, and chickpeas. Garnish with parsley and serve warm.
Notes
Blend the feta while the garlic is warm for a smoother, silkier whip.
Re-crisp chickpeas in an air fryer or oven for leftovers.
