Ingredients

2 boneless skinless chicken breasts

8 oz penne pasta

2 tablespoons Cajun seasoning

3 cloves garlic minced

1 cup shredded mozzarella cheese

1 cup heavy cream

¼ cup grated parmesan cheese

2 tablespoons olive oil

2 tablespoons butter

Salt and black pepper to taste

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Pat the chicken dry and season both sides with Cajun seasoning.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 4–5 minutes on each side until golden brown and cooked through. Remove and set aside.

3. In a large pot, boil salted water and cook penne pasta to al dente. Drain and set aside.

4. In the same skillet, melt butter and sauté minced garlic for 1 minute.

5. Add heavy cream, then stir in mozzarella and parmesan until the sauce becomes creamy and smooth.

6. Slice the rested chicken into strips.

7. Toss the cooked penne into the sauce and combine well. Adjust with salt and pepper.

8. Plate the pasta and top with sliced chicken. Garnish with parsley if desired.

Notes

For even creamier results, use freshly shredded cheese instead of pre-shredded.

Let the chicken rest before slicing to retain juices and keep it tender.
