Ingredients
1 lb chicken breasts
8 oz rotini pasta
1 cup shredded mozzarella cheese
1 cup heavy cream
3 cloves garlic, minced
1 tbsp Cajun seasoning
2 tbsp butter
1 tbsp olive oil
Salt and pepper, to taste
Fresh parsley, chopped (optional)
Instructions
1. Rub Cajun seasoning onto both sides of chicken breasts.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until cooked through. Remove and let rest.
3. In a separate pot, boil salted water. Cook rotini to al dente. Drain and set aside.
4. In the same skillet, reduce heat to medium and melt butter. Add minced garlic and sauté for 30 seconds.
5. Pour in heavy cream, whisking constantly. Simmer for 3–4 minutes until slightly thickened.
6. Stir in shredded mozzarella and whisk until smooth and creamy.
7. Add cooked rotini to the sauce and toss until evenly coated.
8. Slice rested chicken and serve over the pasta. Garnish with parsley if desired.
Notes
Let the chicken rest after cooking to retain juices and enhance flavor.
Add mozzarella gradually on low heat to avoid clumping.
A splash of reserved pasta water can help loosen the sauce if too thick.
