Ingredients
1 lb boneless skinless chicken breasts
8 oz rotini pasta
1 cup shredded mozzarella cheese
1 cup heavy cream
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon Cajun seasoning
2 tablespoons olive oil
1 tablespoon chopped parsley (optional, for garnish)
Salt and pepper to taste
Instructions
1. Season both sides of chicken breasts with Cajun seasoning, pressing it in for full flavor.
2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 4-5 minutes per side until fully cooked and golden brown. Set aside to rest.
3. In a large pot, boil rotini pasta in salted water until al dente. Drain and set aside.
4. In a saucepan, melt butter over medium heat and sauté minced garlic until fragrant.
5. Pour in heavy cream and bring to a gentle simmer.
6. Add shredded mozzarella and whisk continuously until fully melted and the sauce is smooth.
7. Season the sauce with salt and pepper to taste.
8. Stir in cooked rotini pasta, coating evenly with the sauce.
9. Slice rested chicken into strips and serve over the creamy pasta.
10. Garnish with parsley if desired and serve hot.
Notes
For extra heat, add a pinch of cayenne pepper or a few red pepper flakes to the Alfredo sauce.
Always rest the chicken for a few minutes after cooking to lock in juices.
Reheat leftovers gently with a splash of cream or milk to keep the sauce smooth.
