Ingredients
1 1/2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup caramel sauce
1/2 cup brown sugar crumble (store-bought or homemade)
1/3 cup white chocolate, melted
Instructions
1. Preheat oven to 325°F (160°C). Line a 9×9-inch baking pan with parchment paper.
2. Combine graham cracker crumbs and melted butter in a bowl. Mix until evenly combined, then press the mixture into the prepared pan to form a firm crust. Bake for 10 minutes, then remove and let cool slightly.
3. In a large mixing bowl, beat softened cream cheese and granulated sugar until smooth and fluffy.
4. Add eggs one at a time, beating after each addition. Stir in vanilla extract.
5. Pour the cheesecake mixture over the cooled crust and smooth the top with an offset spatula.
6. Bake for 30–35 minutes, or until the center is just set. Remove from oven and cool to room temperature, then chill in the refrigerator for at least 4 hours or overnight.
