Ingredients
1 lb chicken breast, diced
2 tbsp olive oil
2 tbsp butter
1 cup carrots, diced
1 cup celery, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
16 oz potato gnocchi
2 cups spinach, chopped
1 tsp dried thyme
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown. Remove and set aside.
2. In the same pot, melt butter and add carrots, celery, and garlic. Sauté until soft and fragrant, about 5 minutes.
3. Pour in chicken broth and bring to a simmer. Return the chicken to the pot and stir in the heavy cream.
4. Add gnocchi to the soup and simmer for 3–5 minutes until they float and are tender.
5. Stir in chopped spinach and dried thyme. Simmer for another 2 minutes until spinach is wilted.
6. Taste and adjust salt and pepper as needed. Serve hot with optional parmesan or cracked pepper garnish.
Notes
Sear the chicken in batches if necessary to avoid steaming and ensure golden crust.
Use fresh gnocchi for faster cooking and a softer texture.
For a thinner soup, add extra broth or water before serving.
