Ingredients
1 pound large shrimp, peeled and deveined
3 tablespoons unsalted butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon lemon juice
1 teaspoon lemon zest
2 tablespoons fresh parsley, chopped
1/4 teaspoon red pepper flakes (optional)
2 cups cooked white rice
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1 tablespoon butter for rice
Instructions
1. Melt 1 tablespoon butter in a skillet over medium heat. Add shrimp and sear for 1-2 minutes per side. Remove and set aside.
2. Add remaining butter to the skillet. Stir in minced garlic and cook until fragrant (30 seconds).
3. Pour in heavy cream, then stir in Parmesan and lemon zest. Simmer until slightly thickened.
4. Return shrimp to skillet. Simmer 2 minutes. Add lemon juice and red pepper flakes if using.
5. In a saucepan, mix cooked rice with 1 tablespoon butter, dried basil, thyme, and parsley. Cover and steam for 3 minutes.
6. Serve shrimp and sauce over herb rice. Garnish with extra parsley and Parmesan if desired.
