Ingredients
2 large chicken breasts or thighs
250g linguine pasta
1 cup heavy cream
¾ cup grated parmesan cheese
3 cloves garlic, minced
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon chopped parsley or Italian herbs
Salt and pepper, to taste
Instructions
- 1. Pat chicken dry, season with salt, pepper, and herbs.
- Heat butter and olive oil in a skillet; sear chicken 5–6 minutes per side until golden and cooked.
- Set aside. In same skillet, sauté garlic until fragrant.
- Add heavy cream, simmer. Stir in parmesan, whisk until smooth.
- Season to taste.
- Cook linguine in salted water until al dente; drain, reserve some pasta water.
- Toss linguine in sauce, adding pasta water as needed.
- Slice chicken, place on top.
- Garnish with parsley and extra parmesan.
Notes
Use freshly grated parmesan for best flavor and smooth sauce.
To lighten, swap heavy cream with half-and-half.
Add mozzarella or fontina for extra cheesiness.
