Ingredients
2 boneless, skinless chicken breasts
8 oz rotini pasta
3 cloves garlic, minced
1 cup grated Parmesan cheese
1 cup heavy cream
2 tablespoons butter
1 tablespoon olive oil
Salt and pepper, to taste
Fresh parsley, chopped (optional)
Instructions
- Season chicken with salt and pepper. In a skillet over medium heat, add olive oil and sear chicken until golden and fully cooked. Remove and set aside.
- Boil rotini in salted water until al dente. Reserve 1 cup of pasta water and drain.
- In the same skillet, melt butter and sauté garlic until fragrant. Add cream and slowly whisk in Parmesan until smooth.
- Add pasta to the sauce and toss to coat. Use pasta water to loosen sauce if needed.
- Slice chicken and serve on top of pasta. Garnish with parsley if desired
