Ingredients
2 large chicken breasts
1 tablespoon olive oil
2 tablespoons butter (divided)
3 cloves garlic, minced
1 cup heavy cream
1 cup grated parmesan cheese
8 oz rotini pasta
2 tablespoons fresh parsley, chopped
Salt and pepper, to taste
1 teaspoon Italian seasoning (optional)
Instructions
- Season chicken with salt, pepper, and Italian seasoning.
- In a skillet over medium-high heat, add olive oil and 1 tablespoon of butter. Sear chicken 6–7 minutes per side until cooked through. Set aside.
- Cook pasta according to package instructions. Drain and reserve 1 cup of pasta water.
- In the same skillet, add remaining butter and garlic. Sauté until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until smooth.
- Add pasta to the sauce, tossing to coat. Use pasta water to loosen if needed.
- Stir in parsley. Slice the chicken and serve on top of the creamy pasta.
