Description

This Creamy Italian Lemon Spread Delight recipe is a luscious homemade lemon curd made with fresh lemons, eggs, sugar, and butter. Perfect for toast, scones, cakes, or gifting, it’s a simple yet elegant lemon spread that brings a taste of Italy to your kitchen.


Ingredients

3 large fresh lemons (zested and juiced)

1 cup granulated sugar

3 large eggs

1/2 cup unsalted butter (cut into cubes)

1/8 teaspoon salt


Instructions

1. Wash and zest the lemons carefully, avoiding the bitter pith, then squeeze the juice and measure all ingredients.

2. In a heavy-bottomed saucepan, whisk together the eggs and sugar until smooth, then stir in the lemon juice and zest.

3. Place over medium-low heat, whisking constantly, and cook for 8–10 minutes until thickened and it coats the back of a spoon.

4. Remove from heat, whisk in the butter until melted and glossy, then strain through a fine sieve.

5. Pour into sterilized jars, cool to room temperature, then seal and refrigerate until set.

Notes

Always cook over low heat to avoid curdling the eggs. Straining the spread is optional but gives the smoothest texture. You can freeze portions for up to 3 months; thaw in the fridge.
