Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

3 garlic cloves, minced

1/2 cup chicken broth

1/2 cup heavy cream

Juice of 1 lemon

Zest of 1 lemon

1 teaspoon Dijon mustard

1/4 cup grated Parmesan cheese

2 tablespoons chopped parsley

Salt and pepper to taste


Instructions

  1. Pat chicken dry and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken 4-5 minutes per side until golden and cooked through. Set aside.
  3. In the same skillet, sauté garlic for 30 seconds.
  4. Pour in chicken broth, scraping up any browned bits.
  5. Add cream, lemon juice, zest, and mustard. Simmer 3-4 minutes.
  6. Stir in Parmesan until melted and sauce is smooth.
  7. Return chicken to skillet and simmer 2-3 minutes.
  8. Garnish with parsley and serve hot.
