Ingredients
1 lb chicken thighs or breasts
8 oz linguine pasta
1 cup shredded mozzarella cheese
1 cup heavy cream
2 tbsp butter
3 cloves garlic, minced
1 tbsp Cajun seasoning
1 tbsp fresh parsley, chopped
2 tbsp olive oil
Salt and pepper to taste
Instructions
1. Pat chicken dry and season with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken on both sides until golden and cooked through. Remove and rest.
3. Bring a large pot of salted water to a boil. Cook linguine until al dente. Reserve 1/2 cup of pasta water.
4. In the same skillet, reduce heat and melt butter. Add garlic and a pinch of Cajun seasoning. Sauté for 1 minute until fragrant.
5. Pour in heavy cream and whisk until smooth. Gradually add mozzarella, stirring until melted and velvety. Add reserved pasta water if needed.
6. Slice chicken. Toss cooked linguine in sauce. Serve topped with chicken and fresh parsley.
Notes
Use freshly grated mozzarella for a smoother sauce that melts easily.
For extra heat, sprinkle red pepper flakes or add hot sauce to the cream.
