Description

This Creamy Mozzarella Rotini with Spicy Cajun Beef and Velveeta Sauce is the ultimate comfort pasta dish. Featuring spicy Cajun-seasoned ground beef, rich Velveeta cheese sauce, and gooey mozzarella, this quick and easy recipe is perfect for weeknight dinners. It’s creamy, cheesy, and bold—everything you love in one pot!

Ingredients

12 oz rotini pasta

1 lb ground beef

1 ½ tablespoons Cajun seasoning

8 oz Velveeta cheese, cubed

1 cup shredded mozzarella cheese

½ cup heavy cream or milk

½ teaspoon red chili flakes (optional)

1 tablespoon olive oil or butter

Salt and pepper to taste

Fresh parsley for garnish

Instructions

1. Bring a large pot of salted water to a boil and cook rotini until al dente. Drain and set aside.

2. In a deep skillet, heat olive oil over medium-high. Add ground beef and break it apart while cooking. Sprinkle with Cajun seasoning and cook until browned. Set aside.

3. In the same pot used for pasta, add Velveeta and cream over low heat. Stir until melted into a smooth sauce.

4. Stir in the cooked rotini, coating each piece with the cheese sauce.

5. Add the seasoned ground beef to the pasta and fold gently to combine.

6. Transfer to a serving dish, top with shredded mozzarella and chili flakes. Optional: Broil for 1–2 minutes until golden.

7. Garnish with chopped parsley and serve hot.

Notes

Use freshly shredded mozzarella for best melt and flavor.

Broiling at the end gives the dish a delicious bubbly crust—don’t skip it if you can!

Add a splash of milk when reheating to maintain the creamy texture.
