A cozy, satisfying vegetarian dinner that blends creamy orzo pasta with caramelized roasted butternut squash and wilted spinach. This one-pot meal is rich in flavor, easy to make, and perfect for weeknights or meal prep.


Ingredients

Butternut Squash, peeled and cubed

Orzo Pasta

Fresh Spinach

Onion, finely chopped

Garlic, minced

Parmesan Cheese, grated

Vegetable Broth

Heavy Cream or Milk (optional)

Olive Oil

Salt

Black Pepper

Italian Seasoning


Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, pepper, and Italian seasoning. Spread on a baking sheet and roast for 25-30 minutes, turning once.
  2. In a large skillet, heat olive oil over medium heat. Add onion and cook until translucent. Add garlic and cook for 30 seconds.
  3. Stir in orzo, coating it in the oil. Add vegetable broth and simmer 8-10 minutes, stirring often, until orzo is tender and most liquid is absorbed.
  4. Lower heat and stir in cream (if using) and Parmesan until creamy.
  5. Add spinach and stir until wilted.
  6. Fold in roasted squash and adjust seasoning. Serve hot.
