Ingredients
1 lb Italian sausage (mild or spicy)
1 cup ditalini pasta
4 cups chicken broth
1 cup heavy cream
1 cup freshly grated Parmesan cheese
1 can (14.5 oz) diced tomatoes
2 cups fresh spinach
4 cloves garlic, minced
1 small yellow onion, diced
1 tablespoon olive oil or butter
Salt and black pepper to taste
1 pinch red pepper flakes (optional)
Instructions
1. Heat a Dutch oven over medium heat, add olive oil and sausage. Cook, breaking apart with a spoon, until browned. Drain excess fat if needed.
2. Add diced onion and garlic. Cook until fragrant and translucent, about 2–3 minutes.
3. Pour in chicken broth and diced tomatoes with juice. Bring to a simmer and cook for 10 minutes.
4. Stir in ditalini pasta. Simmer for 8–10 minutes or until pasta is tender, stirring occasionally.
5. Reduce heat to low, add heavy cream and Parmesan. Stir until cheese melts and broth turns creamy.
6. Add fresh spinach. Cook 2–3 minutes until wilted. Adjust salt and pepper to taste.
7. Serve hot with extra Parmesan and optional red pepper flakes.

Use freshly grated Parmesan for the best melt and flavor.
To freeze: omit the pasta and cream, and add them fresh when reheating.
