This easy recipe is ideal for cozy nights or meal prep, packed with flavor and made in under an hour. Keywords: creamy chicken rice, spicy garlic chicken, parmesan spinach rice, comfort food dinner.

Ingredients

1 lb boneless chicken thighs or breasts

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon red chili flakes (adjust to taste)

2 tablespoons olive oil

3 cups cooked white rice

3 cups fresh spinach, chopped

1 cup grated Parmesan cheese

1 cup heavy cream

Salt and black pepper, to taste

Instructions

1. In a bowl, combine olive oil, minced garlic, paprika, chili flakes, salt, and pepper. Coat the chicken thoroughly and marinate for 15–20 minutes.

2. Heat a non-stick skillet over medium-high heat. Sear the chicken for 4–6 minutes per side until golden and cooked through. Set aside.

3. In a saucepan, sauté garlic in olive oil until fragrant. Add spinach and cook until wilted.

4. Stir in cooked white rice, followed by heavy cream and Parmesan cheese. Cook until creamy and cheese is fully melted.

5. Plate the rice and top with sliced or whole spicy garlic chicken. Garnish with more chili flakes and Parmesan if desired.

Notes

Add a splash of cream or milk when reheating to restore creaminess.

Adjust chili flakes to control the spice level to your preference.

Use freshly grated Parmesan for the best melty and creamy texture.
